Protein Banana Brownies

Healthy BROWNIES DID YOU SAY?

How did I make these HEALTHY fudgy moist brownies?! 


Brownies that are high in protein and fibre too? 

who are these suitable for?

These are vegan, gluten free and nut free brownies. Made with protein powder, oat flour & bananas. They were kind of accidental to be honest. 

SO WHAT IS IN THEM?

1 regular size bread tin: 


Chocolate Version: 

Wet ingredients:

  • 3 over ripe bananas, mashed
  • 30m olive oil
  • 30ml maple syrup (honey also works)


Dry ingredients: 

  • 3 scoops Arbonne chocolate protein powder*
  • 1/2 cup oat flour (gluten free if needed)
  • 1Tbsp Cocoa powder
  • 1 tsp baking powder 
  • 1/4 tsp xanthate gum
  • 1/2 tsp salt
  • Chopped dark chocolate of choice 
  • Seeds/nuts of choice 


HOW TO MAKE MY CHOCOLATE PROTEIN BROWNIES

  1. Mash the bananas with a fork & mix with the other wet ingredients
  2. In another bowl thoroughly mix the dry ingredients all together. Leave some seeds/nuts/fruit to put on top 
  3. (To make easy oat flour quickly simply blitz regular oats in a blender)
  4. Once the dry ingredients are mixed together, add the wet mix to the dry mix. It will be quite a thick sticky mixture. 
  5. Oil the bread tin (with olive oil) and add the mix. Top with whatever you want. Pecans, raspberries and pumpkin seeds all work well! 
  6. Cook in the oven for 25-30 minutes 170c - You should be able to pull a pick out clean, like you would a normal cake.


Leave in the tin to cool. Then put out and cool before cutting. This is delicious served straight out the oven with ice-cream, or leave for a snack

*I use Arbonne protein and have not tried with a different type of protein powder. Arbonne is particularly good for baking
