Juicy Lamb, Lentil and Feta Burger

This recipe is just so delicious. Reduce your meat intake, reduce your saturated fat but enhance the flavour and create a juicy, healthy burger. 


Ingredients for One Burger 

  • 75g lamb mince (20% fat)
  • 50g tinned green lentils (drained & washed) 
  • 15g feta cheese
  • Salt + pepper
  • Fresh mint & fresh coriander 
  • Spray olive oil 
  • Burger bun
  • Lambs lettuce 
  • 1tbsp 0% fat natural yoghurt or *alpro plain yoghurt no sugars 
  • Fresh Mint
  • Optional: Ring of aubergine (25g) 


*For gluten free option, swap to a GF bun, for dairy free, omit the feta cheese and use alpro plain 


Method

  1. In a preheated oven, roast the aubergine circle 
  2. Finely chop the fresh herbs 
  3. In a mixing bowl mash the lentils
  4. Add the lamb mince, crumbled feta cheese, salt, pepper (onion/garlic powder optional) and fresh herb
  5. Mix all together, combine and make into a pattie
  6. Place a nonstick pan on a high heat, add a few spritz of olive oil and fry the burger pattie, turning after 2 minutes to brown each side
  7. Put a lid over the pan and turn the heat down 
  8. In the burger bun, add the lettuce, roast aubergine, fresh mint and any pickle or tomato/cucumber as desired.  
  9. Once the lamb burger is cooked, layer onto the salad, top with the yoghurt and burger bun, ready to serve!
