Miso Glazed Salmon

There's so much to say for oily fish and I personally struggle with salmon normally, BUT this Fresh Fitness Food recipe, is delicious. Sweet, salty and crispy. Perfect with stir fried veggies!

How to perfectly cook salmon...

You may have heard about oily fish and the benefits of oily fish, or the benefits of omega 3?

So this sweet, salty glazed salmon is healthy and melt in the mouth. Here's how to make it: 


Ingredients (for 2 servings)


  • Miso paste (1 tbsp)
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup


  • 2 salmon fillets
  • Vegetables of choice
  • 1 tbsp rapeseed oil 
  • lime or lemon 
  • chilli flakes


Method


  1. Make the marinade/glaze by mixing the miso, soy and maple syrup in a bowl. Be patient as it takes time to mix the miso paste in - use the back of a spoon to break it up 
  2. Pop both bits of salmon in the glaze and cover it, put to the side. 
  3. Chop your vegetables - thinly slice. 
  4. You can use one or two pans - put a heavy base stir fry pan on a medium to high heat. Add half of the oil and let heat up. Add the vegetables and stir fry. 


How to cook the salmon: Crispy salmon skin whilst still soft and tender 


  1. Once your veg is half cooked, add the other half of the oil to the pan (or a separate pan) and let heat up. 
  2. Once sizzling - add the salmon to the pan skin face down. 
  3. Let this sit for 2-3 minutes, turn the heat down to medium
  4. Stir the veg and flip the salmon. Cook for a further 1-2 minutes. If you see white bobbles coming out of the salmon, it's starting to overcook. 
  5. Take the salmon out, add a dash of soy, the lemon or lime juice and chilli flakes to the veg.
